Method
- Melt the unsalted butter in a large skillet over medium-low heat.
- Add the thinly sliced yellow onions and cook, stirring occasionally, for 8-10 minutes until they are transparent and softened.
- Continue cooking the onions on low heat, stirring occasionally, for another 20-25 minutes, until they are deeply caramelized and golden brown.
- While the onions caramelize, combine the beef broth, caramelized onions, dried thyme, black pepper, and salt in a medium saucepan.
- Bring the mixture to a boil over medium-high heat, then reduce the heat to low, cover the saucepan, and let it simmer gently for 30 minutes to allow the flavors to meld.
- Preheat your oven broiler and place the French bread slices on a baking sheet.
- Broil the bread for 1-2 minutes per side, watching carefully, until golden brown and crispy.
- Carefully ladle the hot French onion soup into four individual oven-safe soup bowls.
- Float one slice of toasted French bread on top of the soup in each bowl.
- Evenly sprinkle the shredded Gruyere cheese and grated Swiss cheese over the bread and soup in each bowl.
- Return the bowls to the broiler for 2-4 minutes, or until the cheese is melted, bubbly, and lightly golden brown.
- Serve immediately and enjoy your classic French onion soup.
Notes
For the best flavor, do not rush the onion caramelization; low and slow heat is key.
To make this soup vegetarian, use vegetable bouillon instead of beef. For a vegan version, also swap butter for olive oil and omit cheese or use vegan alternatives.
The soup base can be made ahead and refrigerated for up to 3-4 days, or frozen for up to 3 months. Always add fresh toasted bread and cheese just before serving.
