Ingredients

  • 2 cups 2% cottage cheese
  • 1 cup frozen fruit berries, mango, or peaches
  • 1-3 tablespoons honey to taste
  • 2 teaspoons vanilla extract
  • 1 ½ medium banana ripe, for creamier texture

Equipment

  • 1 high-powered blender
  • 1 freezer-safe container with a lid
  • 1 ice cream scoop

Method

  1. Add all ingredients (cottage cheese, frozen fruit, honey, vanilla extract, and banana) into a high-powered blender or food processor.
  2. Blend on high speed until the mixture is completely smooth and creamy, scraping down the sides as needed to ensure everything is incorporated.
  3. Continue blending until there are no visible lumps of cottage cheese and the texture is thick and velvety smooth.
  4. Taste the mixture and adjust sweetness with more honey if desired, blending again briefly.
  5. Pour the blended mixture into a freezer-safe container with a lid.
  6. Cover the container tightly and place it in the freezer for at least 4 hours, or until firm enough to scoop.
  7. Before serving, let the ice cream sit at room temperature for 5-10 minutes to soften slightly.
  8. Run an ice cream scoop under warm water for easier scooping, then serve and enjoy your homemade treat.

Notes

For a thicker, firmer ice cream, freeze for 6-8 hours or even overnight. If it becomes too hard, simply let it soften on the counter for 10-15 minutes before scooping.
Get creative with your fruit choices! Frozen mango, peaches, or mixed berries all work wonderfully to customize the flavor of your cottage cheese ice cream.
