Ingredients

  • 1 carton reduced-sodium chicken broth 32 oz
  • 3 cups shredded cooked chicken about 1 lb
  • 1 can condensed cream of chicken soup 10.5 oz, do not add liquid
  • ¼ teaspoon poultry seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 can refrigerated Southern Homestyle Buttermilk Biscuits 16.3 oz, 8 count
  • 1 cup chopped carrots about 2 medium
  • 1 cup chopped celery about 3 stalks
  • 1 tablespoon all-purpose flour for dusting

Equipment

  • 1 5-quart Dutch oven or large heavy-bottomed pot
  • 1 Cutting board
  • 1 knife
  • 1 Rolling pin or your hands
  • 1 Pizza cutter or sharp knife
  • 1 Ladle

Method

  1. In a 5-quart Dutch oven or large heavy-bottomed pot, combine the chicken broth, shredded cooked chicken, condensed cream of chicken soup, poultry seasoning, salt, and black pepper.
  2. Heat the mixture to boiling over medium-high heat, then reduce the heat to low, cover, and simmer for 5 minutes, stirring occasionally.
  3. While the chicken mixture simmers, lightly flour a clean surface.
  4. Roll or pat each refrigerated biscuit to about 1/8-inch thickness, then use a pizza cutter or knife to cut each biscuit into 7 strips, about 1/2-inch wide.
  5. Increase the heat under the Dutch oven to medium-high to return the chicken mixture to a low boil.
  6. Stir in the chopped carrots and celery.
  7. Carefully drop the biscuit strips, one at a time, into the boiling chicken mixture.
  8. Reduce the heat to low and cover the pot.
  9. Simmer for 15 to 20 minutes, stirring occasionally to prevent the dumplings from sticking to each other or the bottom of the pot as they rise and expand.
  10. The dumplings are done when they are fluffy and light inside; you can cut one open to check for any raw dough.
  11. To serve, ladle the hot chicken and dumplings into bowls.

Notes

Chicken Prep: If you don't have pre-cooked chicken, you can boil or bake 1 lb of boneless, skinless chicken breasts or thighs until cooked through, then shred. Ensure chicken reaches 165°F internal temperature.
Biscuit Choice: Any brand of large, flaky buttermilk refrigerated biscuits will work well for the dumplings.
Storage: Store leftovers in an airtight container in the refrigerator for up to 3-4 days. The dumplings will soften as they sit.
