Ingredients

For the Meringue
  • 3 large egg whites room temperature
  • ¼ teaspoon white vinegar
  • ¾ cup granulated sugar
  • ½ teaspoon pure vanilla extract
For the Whipped Cream
  • 1 cup heavy cream cold
  • 1 tablespoon powdered sugar sifted
For Assembly
  • 1 pound strawberries hulled and sliced
  • Fresh chamomile leaves optional, for garnish
  • Baby strawberries optional, for garnish

Equipment

  • 1 stand mixer with whisk attachment
  • 1 electric hand mixer optional
  • 1 Large baking sheet
  • 1 roll parchment paper
  • 1 large mixing bowl for whipped cream
  • 4 serving bowls or 1 large trifle dish

Method

Making the Meringue
  1. Preheat oven to 250°F. Line a large baking sheet with parchment paper.
  2. In the bowl of a stand mixer fitted with the whisk attachment, add the egg whites and white vinegar. Beat on medium speed until frothy, about 2 minutes.
  3. With the mixer running on medium-high, slowly add the granulated sugar, about one tablespoon at a time, over 3-4 minutes. Continue beating until stiff, glossy peaks form and the sugar has dissolved, about 5-7 additional minutes.
  4. Gently fold in the vanilla extract.
  5. Drop spoonfuls of meringue onto the prepared baking sheet, forming small dollops or "kisses" about 1-2 inches in diameter. You can also pipe them for a neater look.
  6. Transfer the baking sheet to the preheated oven and bake for 1 hour, or until the meringues are crisp and dry to the touch.
  7. Turn off the oven, prop the door open slightly with a wooden spoon, and allow the meringues to cool completely inside the oven for at least 2 hours, or overnight. This ensures they dry out fully and remain crisp.
Preparing the Whipped Cream
  1. In a cold bowl, combine the cold heavy cream and sifted powdered sugar.
  2. Using an electric mixer or stand mixer with the whisk attachment, beat on medium-high speed until soft, fluffy peaks form. Be careful not to overbeat, or it will become grainy.
Assembling the Eton Mess
  1. Once the meringues are completely cool, gently break them into irregular bite-sized pieces.
  2. In individual serving bowls or a large trifle dish, layer spoonfuls of broken meringue, whipped cream, and sliced strawberries.
  3. Repeat the layers until all ingredients are used, ending with a generous topping of strawberries.
  4. Garnish with fresh chamomile leaves and baby strawberries, if desired, just before serving.

Notes

For the crispiest meringues, ensure your mixing bowl is absolutely clean and free of any grease before beating the egg whites. Even a tiny bit of fat can prevent them from whipping properly.
You can make the meringue and prepare the strawberries a day ahead. Store the cooled meringues in an airtight container at room temperature, and the sliced strawberries in the refrigerator. Assemble just before serving for the best texture.
Feel free to experiment with other fruits like raspberries, blueberries, or peaches when they are in season for delicious variations.
