Ingredients

  • 2 cans tuna, in water well-drained (5 oz cans)
  • ½ small yellow onion minced
  • 2 stalks celery minced
  • ⅓ cup plain bread crumbs plus 2/3 cup for coating
  • 2 large eggs lightly beaten
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon garlic powder
  • ¼ cup vegetable oil for frying

Equipment

  • 1 large mixing bowl
  • 1 shallow dish or plate
  • 1 Large Skillet 10-inch or 12-inch
  • 1 spatula
  • 1 paper towels

Method

  1. In a large mixing bowl, combine the well-drained tuna, minced yellow onion, minced celery, 1/3 cup of bread crumbs, lightly beaten eggs, paprika, salt, black pepper, and garlic powder.
  2. Mix all ingredients thoroughly until they are well combined and form a cohesive mixture.
  3. Pour the remaining 2/3 cup of plain bread crumbs into a shallow dish or plate.
  4. Take about 1 to 1 1/2 tablespoons of the tuna mixture and gently pat it into a round or oval patty, about 1/2-inch thick.
  5. Carefully dredge each patty in the bread crumbs, ensuring both sides are evenly coated. Set aside on a clean plate or baking sheet.
  6. Heat the vegetable oil in a large skillet over medium heat. The oil should be hot enough that a drop of water sizzles instantly.
  7. Place the breaded tuna patties into the hot skillet, being careful not to overcrowd the pan. Cook in batches if necessary.
  8. Fry for 3 to 4 minutes per side, or until the croquettes are golden brown and crispy.
  9. Transfer the cooked croquettes to a plate lined with paper towels to drain any excess oil. Serve warm.

Notes

For extra flavor, add a pinch of cayenne pepper or a tablespoon of fresh parsley to the tuna mixture.
Ensure your tuna is very well drained; excess moisture can make the croquettes fall apart.
